We may always have certain favorite foods in every different body condition. When you are tired, have a fever, or in certain different weather. For example, when we are tired, we usually want to enjoy warm food that can make us relax for a moment.
Soup is one of my favorite dishes when I'm feeling tired. It's more towards soups that have a clear gravy, without using a lot of colored spices. Clear gravy in soups that use only simple ingredients can relieve fatigue, and at least it worked for me. How about you guys? Do you like soup when you feel tired and want to relax for a while?
So, this time I will share with you about serving broccoli soup with clear sauce. Even though it has a light clear gravy, here I added a soft-textured beaten egg. So it doesn't make the soup feel heavy on the tongue when eaten. For serving, I add noodles.
Broccoli Soup With Beaten Egg
Broccoli soup with eggs is not fishy. For the texture, it remains light in the throat when we swallow it.
For a smooth, beaten egg texture that doesn't look lumpy in a clear sauce, there's a special technique that I'll tell you about later.
In this recipe, I use a duck egg which is indeed efficacious for increasing energy in the body. Also, the content of duck eggs is at least better and organic than chicken eggs in general which are fed with unnatural ingredients.
Using Instant Noodles
In this broccoli soup, I added instant noodles with a white curry variant. There is white curry powder inside the noodle package.
I really like the texture of instant noodles. But you can replace it with vermicelli, or even other types of pasta.
If you don't like noodles, you can add potatoes as a source of carbohydrate ingredients.
THE INGREDIENTS
- Instant noodles (optional)
- Onion
- Garlic
- Red chilies (optional)
- Salt
- Pepper
- Broccoli
- An egg
- Bay leaves
- Kaffir Lime Leaves
- Cinnamon
COOKING INSTRUCTIONS
First of all, we have to prepare broccoli and instant noodles in advance to prepare. Boil the water, then cook the instant noodles according to the directions on the product packaging.
Remove the noodles when the texture is cooked, strain, and discard the water. Then set aside.
Next, prepare the broccoli. Boil briefly until half cooked in boiling water that has been added with salt.
Once the broccoli is almost cooked, remove and drain the broccoli. Set aside. After this, we will prepare the soup.
Chop the onion, and garlic, and slice the red chilies. Then heat the oil, and fry them for a while.
After the onions are fragrant, add about 500-700 ml of water for two packs of instant noodles like I used. Use the amount of water according to your taste. Bring the water to a boil.
Don't forget to add seasoning. Here I also add white curry powder which is already available in the noodle package.
Once the water boils, add the beaten eggs and keep stirring. Don't give your hands a break time after the beaten eggs are added to the soup. This method is to make the egg texture not lumpy and the texture remains soft.
Cook for a few minutes until the eggs are completely cooked. After that, add broccoli. Cook until the broccoli is cooked through.
SERVING WAY
Serve broccoli soup with instant noodles that are ready to serve. Enjoy it while it's warm, and give yourself time to take a break from the routine.
