Mastering Fried Vegetables / 野菜の揚げ物を極めるぞ

I have a deep affection for winter root vegetables. Among them, turnips hold a special place in my heart. In Yakuzen, based on Chinese medicine, turnips are known for their warming properties, and I love using them in soups, salads, and pickles in this season. You can see it in the photo on the top of this post.

Recently, I stumbled upon a simple recipe that transforms turnips by simply coating them in batter and Panko (bread crumbles), and frying them. The result is incredibly delicious.

When making battered fried dishes, I use a vegan-friendly method involving just flour and water, and Panko. Just two or three pieces of turnips can be a satisfying main dish.

If you don't have breadcrumbs at home, you can grind up bread in a blender to make your own. Be careful with very hard bread, though, so as not to damage your blender!

Considering health impacts, I've recently been frying with a minimal amount of olive oil and discarding it after one use. While it feels wasteful and adds to the cost, health comes first.

Speaking of fried root vegetables, I also recommend burdock root fritters and mixed vegetable tempura 😉

While fried meat and fish are delicious, don't underestimate vegetable fritters. This winter, I'm excited to explore various fried winter vegetable dishes. I've even found a recipe for what's called "Cabbage Mille-Feuille Fry." I'll be trying it out soon.

私は冬の根菜が大好きです。薬膳では体を温める効果があるとされるカブは中でも大好きな野菜の一つで、スープやサラダ、漬物に使います。

最近、カブに衣をつけて揚げるだけのシンプルなレシピに出会い、これがおいしいのなんの。

私は衣をつけるタイプの揚げ物を作るときは、水溶き小麦粉をつけて衣をつけるだけなので、このカブの揚げ物もビーガンで作れます。2、3切れもあれば満足できるメイン料理になります。

家にパン粉がない場合は、家にあるパンをブレンダーで粉にして代用できます。パンがあまりに硬い時はブレンダーを壊さないように要注意です。

健康への影響を考えて、最近は少なめのオリーブオイルで揚げ焼きにして、オイルは一度で捨ています。オイルには申し訳ないし、コストもかかるとは思うのですが、やっぱり健康は大事です。

根菜の揚げ物といえば、ごぼうの唐揚げとかき揚げもおすすめです。

お肉やお魚の揚げ物もおいしいですが、野菜の揚げ物を甘く見てはいけません。この冬はいろいろな冬野菜の揚げ物を開拓したくなって、キャベツのミルフィーユ揚げなるレシピを見つけてしまいました。こちらも近々作ってまたレポートします!
